This wine is an ideal alternative to Sauternes, especially for consumers in the New World who could never find a Sauternes for the same price. It is produced with the same dominant varietal Sémillon which was submitted to the same noble rot and vinified with similar techniques.
Note: This wine comes in half-format (375 mililiters).
edit Tasting
A very sweet, soft start with a crescendo of acidity that stops just at the right moment, before a long trail of apricot and overripe peach.
edit Serving
This wine should be served chilled, before appetizers of after desert - preferably not after pastry because that would lead to a sugar overdose!
This wine could be drinked now or cellared for 2 to 4 years.
edit Production
The 2005 vintage enjoyed a warm, sunny climate with some rain in early June. Grapes were individually handpicked over the course of 6 weeks, between May 23 and July 1st - a rather late harvest for this region.
Juices underwent fermentation at 13-15° for 4 to 8 weeks. They were separately matured in French oak barrels, and were blended just prior to bottling.
